How to…

Make grilled pizza:
1.  Make pizza dough or buy it from your local Greek pizza place (it helps if the lady is skeptical that you’ll be able to stretch out the dough).
2.  Invite friends (like Kristen and Tim) over for dinner.
3.  Give every one a chunk of dough with instructions to “stretch it out” – all shapes are encouraged.  It’s all about the artistry.
4.  Once the dough is suitably thin (take that, pizza lady), put it on a plate and cover the top with olive oil (a pastry brush works well for this).  Put the dough onto the grill (which should be at medium heat), oil-side DOWN.
5.  Grill until the dough is golden brown.  **IMPORTANT!!** – Before taking off the grill, generously brush the top with olive oil.  Take the dough off of the grill and turn it upside down onto a plate so that the grilled side becomes the top.
6.  Put on your toppings.  Using lots of little bowls with different toppings is the most fun.  Here’s a suggested list: pizza sauce or basil pesto, feta cheese, mozzarella cheese, raw onions, sliced Kalamata olives, broccoli (blanched), sauted onions and zucchini, pepperoni, sweet peppers, and raw tomatoes.  Give points for creativity.
7.  Put back on the grill.  Grill until the crust is done and the cheese has melted.
8.  Eat and enjoy.
9.  Make round two of pizza to eat for lunch the next day.  Yummy!

Make tzatziki (thanks to a lesson from Thea Salomi):

1.  Peel and grate (on the large holes) two medium cucumbers.  Salt generously.  Wait for a couple minutes and then squeeze firmly to get rid of as much liquid as possible.
2.  Add the squeezed cucumber to one 16-ounce container of either Greek yogurt or sour cream.
3.  Add 2-3 cloves of garlic, minced (or through a press).
4.  Stir in a generous amount of olive oil.
4.  Add a very generous amount of dill, minced.
5.  Salt to taste.
6.  If you’d like, add just a little bit of lemon.  (This isn’t that authentic but does taste good!)
7.  Stir and enjoy with lamb souvlaki.  Or eat with warmed pita wedges.

Grow out your bangs:
1.  Don’t ask me.  But I’m going to try.  We’ll see how it goes!

    Your recipes have me in need of a paper towel – they sound so good!  I need to make the tzatziki for Todd and Zona.  I think they would like it.  And maybe when we are all in AK?!
