I don’t have any pictures of it because I ate it too quickly!
1. Roast sweet potatoes (cut into cubes) with olive oil and garlic. Let them get cold.
2. On your plate, layer: cold garlic sweet potatoes, cubed hard-boiled eggs (preferably from free-range chickens), arugula and spinach, and thin-shaved carrots.
3. Drizzle with high-quality extra-virgin olive oil (preferably from Greece!) and sprinkle with lots of coarse unprocessed sea salt.
4. Devour and feel proud of yourself for giving your baby (or your body) all those nutrients.
(Arugula is my new favorite green. It’s delicious but is also a member of the cruciferous family so it has lots of cancer-fighting benefits. Arugula is rather expensive to buy but exceedingly easy to grow. It should be part of everyone’s garden!)
